  • 2 boneless skinless chicken thighs
  • 2 garlic cloves
  • 15g fresh ginger
  • 1 red chili
  • 1 lime
  • 25g fresh coriander
  • 25g fresh mint
  • 0.5 red onion
  • 1 curry powder
  • 350 water
  • 250 microwave rice
  • olive oil
  • salt
  • black pepper

Instructions

  1. 1. Marinate chicken: Grate half of the garlic into a bowl, squeeze in half a lime's juice, season with salt, and add chicken. Mix well and marinate for at least 30 minutes.
  2. 2. Prepare aromatics: Finely slice remaining garlic, cut ginger into matchsticks, and slice red chili.
  3. 3. Cook chicken: Heat olive oil in a frying pan over medium heat. Add marinated chicken and cook until charred and cooked through (10-15 minutes). Transfer to a plate to rest.
  4. 4. Create broth: In the same pan, sauté ginger, sliced garlic, and chili for about 3 minutes. Add curry powder and cook for another minute before pouring in water to simmer for 5 minutes. Finish with remaining lime juice and season to taste.
  5. 5. Prepare herb salad: Pick leaves from coriander and mint; finely slice red onion and combine in a bowl.
