  • 3 cups cooked pasta (rotini or penne)
  • 1 ½ cups cherry tomatoes, halved
  • 1 cup cucumber, diced
  • ½ cup red bell pepper, diced
  • ½ cup red onion, thinly sliced
  • ¾ cup kalamata olives, sliced
  • 1 cup feta cheese, crumbled
  • ¼ cup olive oil
  • 2 tablespoons red apple vinegar
  • Juice of half a lemon
  • Fresh parsley to garnish

Instructions

  1. Cook the pasta in boiling salted water until al dente; drain and rinse with cold water.
  2. In a bowl, whisk together olive oil, vinegar, Dijon mustard, oregano, garlic powder, salt, black pepper, and lemon juice for the dressing.
  3. In a large mixing bowl, combine cooled pasta with cherry tomatoes, cucumber, red bell pepper, red onion, kalamata olives, and feta cheese.
  4. Pour dressing over the salad and gently toss until evenly coated.
  5. Chill for at least 30 minutes before serving and garnish with fresh parsley.
