  • 2 boneless, skinless chicken breasts
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt & black pepper to taste
  • Juice of lemon
  • 300g Brussels sprouts, halved
  • 1 tbsp olive oil
  • 1 tbsp butter
  • 1 tbsp flour
  • 1 cup milk
  • 2 cloves garlic, minced
  • 1 cup grated Parmesan

Instructions

  1. Season the chicken breasts with olive oil, garlic powder, onion powder, salt, pepper, and lemon juice.
  2. Grill the chicken on medium-high heat for 5-6 minutes per side until fully cooked.
  3. Preheat the oven to 200°C (390°F). Toss halved Brussels sprouts in olive oil, salt, and pepper; roast for 20 minutes.
  4. For the sauce, melt butter in a saucepan; add flour and whisk for 1 minute. Gradually add milk while stirring; then mix in garlic and simmer until thickened. Stir in Parmesan cheese.
  5. Slice the grilled chicken and layer it with roasted Brussels sprouts in bowls. Drizzle sauce generously over both.
