  • 1 chicken breast (cut into chunks)
  • 1 cup sweet potatoes (peeled & cubed)
  • 1 cup broccoli florets
  • 1 tbsp olive oil
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt & black pepper to taste
  • Optional: chili flakes, lemon juice

Instructions

  1. Preheat your oven to 400°F (200°C). Toss sweet potato cubes with half of the olive oil, smoked paprika, salt, and pepper. Spread on a baking tray and roast for 20-25 minutes until golden.
  2. Season chicken chunks with garlic powder, onion powder, salt, and pepper. Grill on medium heat for 6-8 minutes until charred and cooked through.
  3. In a pan, heat the remaining olive oil and sauté broccoli florets for about 5-6 minutes until bright green. Season as desired.
  4. Assemble your plate by arranging grilled chicken, roasted sweet potatoes, and sautéed broccoli. Drizzle with lemon juice if desired.
