Ingredients

For the Chicken:
1 chicken breast
1 tablespoon olive oil
Juice of ½ lime
1 teaspoon chili powder
½ teaspoon cumin
Salt and black pepper, to taste

For the Red Onion Salsa:
½ red onion, thinly sliced
¼ cup diced tomato
1 tablespoon chopped cilantro
½ jalapeño (optional), finely chopped
Juice of ½ lime
Salt, to taste

Other:
½ avocado, sliced
Fresh cilantro, for garnish

Instructions

  1. Marinate the Chicken
    In a bowl, combine olive oil, lime juice, chili powder, cumin, salt, and pepper. Coat the chicken breast evenly in the mixture. Marinate for at least 15 minutes, or up to overnight for deeper flavor.
  2. Grill the Chicken
    Preheat a grill or grill pan to medium-high heat. Cook the chicken for 6–7 minutes per side, or until fully cooked and golden. Let it rest for a few minutes, then slice.
  3. Make the Salsa
    In a small bowl, combine red onion, tomato, cilantro, jalapeño (if using), lime juice, and salt. Stir well and let sit for 5 minutes to allow flavors to meld.
  4. Assemble the Plate
    Place the grilled chicken on a plate, top with red onion salsa and avocado slices. Garnish with extra cilantro if desired.
  5. Serve Fresh
    Enjoy immediately on its own or with rice, warm tortillas, or a light green salad.
