  • 1 lb lean ground beef (93% preferred)
  • 2 medium sweet potatoes, peeled and diced
  • 1 cup cottage cheese
  • 1 avocado, sliced
  • 1 yellow onion, diced
  • 2 tbsp olive oil
  • 2 tbsp hot honey (store-bought or homemade)
  • 1 taco seasoning packet (or 2 tbsp homemade)
  • 1/2 tsp paprika
  • 1/2 tsp garlic powder
  • 1/4 tsp cinnamon
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F.
  2. In a mixing bowl, toss diced sweet potatoes with 1 tablespoon olive oil, paprika, garlic powder, cinnamon, salt, and pepper. Spread evenly on a baking sheet and roast for 40–45 minutes.
  3. While the sweet potatoes are roasting, heat the remaining tablespoon of olive oil in a skillet over medium heat. Add diced onion and cook until softened before adding ground beef and taco seasoning. Cook until browned.
  4. In serving bowls, layer roasted sweet potatoes followed by ground beef, sliced avocado, and cottage cheese. Drizzle with hot honey.
