  • 1 teaspoon vegetable oil
  • 3 pounds boneless chuck roast (cut into 1-inch pieces)
  • Salt and freshly ground pepper (to taste)
  • 2 large onions (sliced)
  • 3 cloves garlic (minced)
  • 2 tablespoons tomato paste
  • 2 tablespoons flour
  • 2½ cups beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon brown sugar
  • 2 sprigs thyme
  • 1 pound carrots (peeled and cut into chunks)
  • pounds Yukon Gold potatoes (peeled and cut into pieces)
  • ½ cup chopped parsley

Instructions

  1. Heat vegetable oil in a Dutch oven over medium-high heat. Cook diced turkey bacon until crispy, about 4–5 minutes; set aside.
  2. Season beef with salt and pepper. Brown each piece in batches for about 1–2 minutes per side; set aside with turkey bacon.
  3. Sauté sliced onions in the same pot until browned (about 5 minutes). Add minced garlic and cook until fragrant.
  4. Stir in flour and tomato paste; cook for another minute until dark red. Pour in beef broth while scraping up browned bits from the pot.
  5. Add remaining broth, Worcestershire sauce, brown sugar, salt, pepper, browned beef, turkey bacon, and thyme. Bring to a boil.
  6. Reduce heat to low and cover; let simmer for one hour.
  7. Add carrots and potatoes; cover again and cook for an additional hour until beef is tender.
  8. If desired, thicken by boiling uncovered or using a flour slurry.
  9. Discard thyme sprigs; adjust seasoning as needed before serving hot.
