  • 1/4 cup melted coconut oil
  • 1/4 cup maple syrup
  • 1/2 cup coconut sugar
  • 2 eggs (at room temperature)
  • 1 1/2 cups chopped pecans

  1. Preheat your oven to 350°F and line a 9×9-inch baking pan with parchment paper.
  2. In a large bowl, mix almond flour, melted coconut oil, maple syrup, and vanilla extract until combined. Press this mixture evenly into the bottom of the prepared pan and bake for about 10 minutes until lightly golden.
  3. While the crust bakes, whisk together coconut sugar, melted coconut oil, maple syrup, vanilla extract, and room temperature eggs in another bowl. Fold in chopped pecans.
  4. Pour the pecan filling over the baked crust and return to the oven for an additional 20-25 minutes until set.
  5. Allow cooling for at least 30 minutes before transferring to the fridge to chill completely (about an hour). Cut into squares and serve.
