  • 8 ounces rotini noodles
  • 3/4 cup chopped English cucumber
  • 3/4 cup shredded carrot
  • 1 yellow bell pepper (chopped)
  • 1/2 cup diced red onion
  • 5 ounces sliced olives
  • 14 ounces cherry tomatoes (halved)
  • 34 ounces turkey pepperoni (quartered)
  • 6 ounces fresh mozzarella (cubed)
  • Fresh basil for garnish
  • Light Caesar dressing
  • Light Greek dressing

Instructions

  1. Cook the rotini noodles in boiling water until al dente. Drain and rinse with cold water.
  2. In a mixing bowl, combine cooked pasta, cucumber, carrot, yellow bell pepper, red onion, olives, cherry tomatoes, turkey pepperoni, mozzarella cubes, and fresh basil.
  3. Add both dressings along with salt and black pepper; toss until well mixed.
