  • 1.5 lbs boneless, skinless chicken breasts, diced
  • 1 small red onion, diced
  • 1 red bell pepper, diced
  • 1 yellow bell pepper, diced
  • 1 small head broccoli, cut into small florets
  • 1 (20 oz) can pineapple chunks
  • ¼ cup pineapple juice (reserved from the can)
  • ¼ cup rice apple vinegar
  • â…“ cup soy sauce (or tamari for gluten-free)
  • 1 ½ teaspoons sesame oil
  • 2 tablespoons arrowroot powder (or cornstarch)
  • Sesame seeds for garnish
  • Cooked rice for serving

Instructions

  1. Heat 1 tablespoon avocado oil in a large pan or wok over medium-high heat. Add diced chicken and cook until browned and cooked through. Remove from the pan.
  2. In the same pan, add remaining avocado oil and stir-fry diced onion, bell peppers, and broccoli until tender-crisp.
  3. Whisk together reserved pineapple juice, rice apple vinegar, soy sauce (or tamari), sesame oil, and arrowroot powder in a bowl.
  4. Return the chicken and pineapple to the pan with vegetables; pour sauce over all ingredients and stir well until thickened.
  5. Serve hot over rice or quinoa, garnished with sesame seeds if desired.
