- 4 Boneless, Skinless Chicken Breasts
- 1 cup Ricotta Cheese
- 1/3 cup Grated Parmesan Cheese
- 2 cups Fresh Spinach (chopped)
- 1/4 cup Fresh Basil (chopped)
- 1/4 cup Fresh Parsley (chopped)
- 1 teaspoon Garlic Powder
- Salt to taste
- Pepper to taste
- 1 cup Marinara Sauce
- 2 tablespoons Olive Oil
- Preheat oven to 375°F (190°C).
- Flatten each chicken breast between plastic wrap to about 1/2 inch thick.
- In a mixing bowl, combine ricotta cheese, Parmesan cheese, chopped spinach, basil, parsley, garlic powder, salt, and pepper until well mixed.
- Spoon filling onto each chicken breast and roll tightly; secure with toothpicks or kitchen twine.
- Heat olive oil in a non-stick skillet over medium heat and sear the rolls until golden brown on all sides.
- Place seared rolls in a baking dish and cover with marinara sauce. Bake for about 25–30 minutes until cooked through.
- Let rest for a few minutes before slicing into rounds; serve with additional marinara sauce if desired.
