  • 4 Boneless, Skinless Chicken Breasts
  • 1 cup Ricotta Cheese
  • 1/3 cup Grated Parmesan Cheese
  • 2 cups Fresh Spinach (chopped)
  • 1/4 cup Fresh Basil (chopped)
  • 1/4 cup Fresh Parsley (chopped)
  • 1 teaspoon Garlic Powder
  • Salt to taste
  • Pepper to taste
  • 1 cup Marinara Sauce
  • 2 tablespoons Olive Oil

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Flatten each chicken breast between plastic wrap to about 1/2 inch thick.
  3. In a mixing bowl, combine ricotta cheese, Parmesan cheese, chopped spinach, basil, parsley, garlic powder, salt, and pepper until well mixed.
  4. Spoon filling onto each chicken breast and roll tightly; secure with toothpicks or kitchen twine.
  5. Heat olive oil in a non-stick skillet over medium heat and sear the rolls until golden brown on all sides.
  6. Place seared rolls in a baking dish and cover with marinara sauce. Bake for about 25–30 minutes until cooked through.
  7. Let rest for a few minutes before slicing into rounds; serve with additional marinara sauce if desired.
