  • 2 1/4 cups (280g) all-purpose flour
  • 1/4 cup (50g) granulated sugar
  • 1 packet (7g) instant yeast or active dry yeast
  • 1 tsp salt
  • 2/3 cup (160ml) lukewarm whole milk
  • 2 tbsp (28g) unsalted butter, melted and cooled
  • 1 cup (226g) cold unsalted butter
  • 1 large egg, beaten
  • Optional: chocolate chips or Nutella
  • Optional: almond paste

Instructions

  1. In a bowl, whisk together flour, sugar, and salt. Stir in yeast.
  2. Add lukewarm milk and melted butter; mix until shaggy dough forms.
  3. Knead for about 5 minutes until smooth. Let rise in a greased bowl for 45 minutes.
  4. Roll cold butter into a square between parchment sheets; chill until firm.
  5. Roll risen dough into a square; enclose the butter block and fold.
  6. Roll out to form a rectangle and fold into thirds; refrigerate for 20 minutes.
  7. Repeat rolling and folding two more times.
  8. Roll dough into a large rectangle and cut into triangles; roll to shape croissants.
  9. Let rise on a baking sheet for one hour; preheat oven to 400°F (200°C).
  10. Brush with egg wash and bake for 20–25 minutes until golden.
