  • 2 cups cooked chicken, shredded or diced
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon paprika
  • Salt, to taste
  • 1/2 cup enchilada sauce
  • 8 flour or corn tortillas
  • 1 1/2 cups shredded cheese blend (cheddar and Monterey Jack)
  • Fresh cilantro, chopped
  • Sour cream, for serving
  • Sliced avocado, for serving

Instructions

  1. In a skillet, sauté diced onion and minced garlic in oil over medium heat until translucent. Add shredded chicken, cumin, chili powder, paprika, and salt. Stir in a few spoonfuls of enchilada sauce.
  2. Warm tortillas in a dry skillet or microwave wrapped in a damp towel until flexible.
  3. Spoon chicken filling onto each tortilla, sprinkle with cheese, roll tightly, and place seam-side down in a baking dish.
  4. Pour remaining enchilada sauce over the rolled tortillas and top with extra cheese.
  5. Bake at 375°F for about 20 minutes until bubbly.
