  • 1/2 cup powdered sugar
  • 1 1/2 cups flour
  • Pinch of salt
  • 1 cup granulated sugar
  • 2 teaspoons packed lemon zest
  • 6 tablespoons fresh lemon juice
  • 2 large eggs
  • 2 large egg yolks
  • 1/2 teaspoon baking powder
  • 2 tablespoons flour
  • Powdered sugar for sprinkling

Instructions

  1. Preheat oven to 350°F (175°C). Line a loaf pan with parchment paper.
  2. For the crust: Combine butter, powdered sugar, flour, and salt in a bowl. Use a pastry blender or your fingers to mix until coarse. Press into the bottom of the pan and bake for 25 minutes until edges are slightly browned.

  4. Pour filling over cooled crust and bake for an additional 20-23 minutes until set.
