  • 3 cups sugar
  • High-proof lemon juice (as a substitute for alcohol)

Instructions

  1. Wash the lemons thoroughly and zest them using a vegetable peeler, avoiding the bitter white pith.
  2. Place the lemon peels in a large glass jar and add high-proof lemon juice.
  3. Seal the jar tightly and store it in a cool dark place for 7 to 30 days, shaking occasionally.
  4. Combine water and sugar in a saucepan over medium heat until dissolved; let cool.
  5. Strain the infused liquid to remove peels, then mix with cooled syrup until combined.
  6. Bottle your limoncello using a funnel and let it rest for at least one week before serving chilled.
