  • 1 liter fruit alcohol
  • 400g sugar (or 225g if using fruit alcohol)
  • 1.2 liters water

Instructions

  1. Wash the lemons thoroughly and use a peeler to remove the zest without the bitter white pith.
  2. Place the lemon zest in a glass jar and cover with alcohol. Seal tightly and store in a cool, dark place for one month, shaking gently every few days.
  3. After a month, strain the infused alcohol through a fine strainer or cheesecloth.
  4. In a saucepan, combine sugar and water; bring to a boil until dissolved. Allow to cool completely before mixing with the strained alcohol.
  5. Bottle your limoncello and let it rest in the refrigerator or freezer for at least ten days before serving.
