  • 12 oz sun-dried tomatoes, drained and diced
  • 1/2 lb kalamata olives, chopped
  • 1/2 cup red onion, chopped
  • 1 cup spinach, sliced
  • 3 tbsp fresh basil, thinly cut
  • 3 tbsp fresh mint, thin strips
  • 1/3 lb feta cheese, crumbled
  • 1/2 tsp black pepper, ground
  • 3 tbsp extra-virgin olive oil
  • 3 tbsp fresh lemon juice
  • Zest from 1 lemon, grated

Instructions

  1. Cook orzo in boiling salted water for 8–10 minutes until al dente. Drain.
  2. Chop olives and red onion; slice spinach and dice sun-dried tomatoes.
  3. In a large bowl, combine cooked orzo with olives, red onion, sun-dried tomatoes, spinach, basil, mint, pepper, olive oil, lemon juice, and zest.
  4. Fold in crumbled feta gently.
  5. Let sit for at least 10 minutes to meld flavors before serving.
