  • 1 teaspoon baking powder
  • ¼ teaspoon kosher salt
  • ¾ cup unsalted butter (room temperature)
  • 1 cup granulated sugar
  • 1 teaspoon vanilla paste or extract
  • 1 teaspoon almond extract
  • 3 large eggs (room temperature)
  • 1 cup finely ground almond flour
  • ⅓ cup sliced almonds
  • For the honey syrup: ⅓ cup honey and ⅓ cup water

Instructions

  1. Preheat your oven to 375°F. Grease an 8” cake pan and line it with parchment paper.
  2. In a bowl, whisk together all-purpose flour, baking powder, and salt.
  3. Cream the butter and sugar in a stand mixer until light and fluffy, about two minutes.
  4. Mix in vanilla and almond extracts, then gradually add whisked eggs.
  5. Slowly incorporate dry ingredients until combined, then fold in almond flour gently.
  6. Pour batter into the prepared pan and sprinkle sliced almonds on top.
  7. Bake for 28-35 minutes until a toothpick inserted comes out clean.
  8. While baking, combine honey and water in a saucepan over medium-low heat to create the simple syrup.
  9. Once baked, let the cake cool slightly before pouring the syrup over it.
  10. Allow to soak for about 20 minutes before serving.
