  • 2 teaspoons active dry yeast
  • 1/4 cup warm water (60 ml)
  • 1/4 cup honey (60 ml)
  • 1/4 cup melted butter (60 ml)
  • 3 cups all-purpose flour (375 g)
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt

Instructions

  1. In a small bowl, combine rolled oats with warm milk and let sit for 10 minutes.
  2. In another bowl, dissolve active dry yeast in warm water and add a tablespoon of honey; let sit until bubbly (5-10 minutes).
  3. Mix softened oats, melted butter, and remaining honey into the yeast mixture.
  4. Gradually stir in flour, ground cinnamon, and salt until you form a shaggy dough.
  5. Knead on a floured surface for 8-10 minutes until smooth; let rise in an oiled bowl covered with a damp cloth for about 1-1.5 hours.
  6. Punch down the dough, shape into a log, place in a greased loaf pan, cover again, and let rise for another 30-40 minutes.
  7. Preheat oven to 375°F (190°C) and bake for 30-35 minutes until golden brown and hollow when tapped.
  8. Allow cooling on a wire rack before slicing.
