  • 1 tablespoon oil
  • 1 pound boneless, skinless chicken breast (diced into about 1-inch pieces)
  • Salt & pepper
  • 1 onion (cut into thin wedges)
  • 1 can (8 oz) pineapple chunks or tidbits packed in juice, NOT drained
  • 1/2 cup BBQ sauce
  • 1 red pepper (diced)
  • 1 yellow pepper (diced)
  • 1 cup white rice
  • 1 cup water
  • 1 teaspoon oil
  • 1/4 teaspoon salt
  • 1/2 cup BBQ sauce
  • 2 teaspoons cornstarch
  • 2 tablespoons water

Instructions

  1. Set the Instant Pot to sauté. Add the oil and diced chicken pieces. Season with salt and pepper. Cook until browned. Add onion and stir, cooking for an additional minute. Switch off the Instant Pot.
  2. Add the can of pineapple (juice AND chunks) to the chicken in the Instant Pot. Stir in 1/2 cup BBQ sauce along with diced peppers. Ensure to scrape any browned bits from the bottom of the pot to avoid a burn warning.
  3. Place the trivet over the chicken mixture. In an oven-proof dish that fits into your Instant Pot, add white rice. Stir in water, oil, and salt before placing this dish on top of the trivet.
  4. Close the lid of the pressure cooker and set the valve to “sealing.” Choose “pressure cook” on high for 2 minutes. Once cooking time ends, allow a 10-minute natural pressure release by unplugging the Instant Pot and letting it sit undisturbed before manually releasing any remaining pressure.
  5. Open the lid carefully and remove both the rice dish and trivet. Use a fork to fluff up your rice. In a bowl, combine remaining 1/2 cup BBQ sauce with cornstarch and water. Set your Instant Pot back to sauté mode, stir in this mixture, and simmer until thickened—about 1 minute. Serve over rice for a delightful meal!
