  • 3 pounds beef stew meat (or lamb)
  • 1/4 cup all purpose flour
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 2 teaspoons fresh rosemary
  • 1 teaspoon dried thyme
  • 4 cups beef broth
  • 5 carrots (peeled and cut into chunks)
  • 1 cup frozen peas
  • 2 bay leaves
  • Mashed potatoes

Instructions

  1. Heat olive oil in a large Dutch oven over medium-high heat.
  2. In a large Ziploc bag, combine beef stew meat with flour, salt, pepper, garlic powder, onion powder, rosemary, and thyme; shake to coat evenly.
  3. Sear the coated meat in the hot oil until browned on all sides.
  4. Gradually stir in the beef broth while mixing.
  5. Add carrots and bay leaves; bring to a boil.
  6. Reduce heat to medium-low, cover, and simmer for about 45 minutes, stirring occasionally.
  7. Five minutes before serving, add frozen peas.
  8. Remove bay leaves before serving and enjoy alongside creamy mashed potatoes.
