  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 carrots, chopped
  • 2 stalks celery, chopped
  • 3 cloves garlic, minced
  • 2 cups beef broth
  • 1 (14-ounce) can crushed tomatoes
  • 1 teaspoon dried rosemary
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Heat olive oil in a large pot over medium-high heat. Season the beef with salt and pepper, then sear until browned on all sides (about 5-7 minutes). Remove from the pot.
  2. In the same pot, add onion, carrots, celery, and garlic; cook until softened (about 5 minutes).
  3. Return the beef to the pot and add beef broth, crushed tomatoes, rosemary, thyme, salt, and pepper. Bring to a boil.
  4. Reduce heat to low and cover; let simmer gently for 3-4 hours until the beef is fork-tender.
  5. Shred the beef directly in the pot using two forks. Stir well to combine and garnish with fresh parsley before serving.
