  • 1 pound Italian sausage (beef, turkey, or chicken)
  • 4 tablespoons olive oil
  • 1 large onion, chopped
  • 2 large carrots, chopped
  • 3 stalks celery, chopped
  • 1 large red bell pepper, chopped
  • 1 large green bell pepper, chopped
  • 2 medium zucchini, sliced
  • 6 cloves garlic, minced
  • ½ cup apple cider vinegar
  • 6 cups chicken broth
  • 2 cans tomato sauce (15 oz each)
  • 1 can diced fire-roasted tomatoes (15 oz)
  • 2 tablespoons dried Italian seasoning
  • 1½ cups small pasta

Instructions

  1. In a Dutch oven over medium heat, brown the sausage until cooked through. Drain and set aside.
  2. Sauté onion in olive oil until softened. Add carrots and celery; cook until tender.
  3. Stir in bell peppers and zucchini; cook until all vegetables are soft.
  4. Add garlic and apple cider vinegar; bring to a boil.
  5. Mix in chicken broth, tomato sauce, diced tomatoes, Italian seasoning, and red pepper flakes.
  6. Return sausage to pot; boil then reduce heat and simmer uncovered for about 10 minutes.
  7. Add pasta and cook until al dente.
  8. Finish with fresh parsley; season to taste before serving.
