  • 2 cups milk
  • 8 large eggs
  • 3 stalks green onions, chopped
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • ¾ pound turkey sausage, diced
  • 6 English muffins, diced
  • ½ teaspoon ground paprika
  • For Hollandaise Sauce: 1 cup milk
  • 1 package Hollandaise sauce mix
  • ¼ cup butter

Instructions

  1. Grease a 9×13-inch baking dish.
  2. In a mixing bowl, whisk together milk, eggs, green onions, onion powder, and salt.
  3. Layer half of the turkey sausage in the baking dish followed by half of the diced English muffins. Repeat layers and pour egg mixture on top.
  4. Cover tightly with plastic wrap and refrigerate overnight.
  5. Preheat oven to 375°F (190°C). Remove plastic wrap, sprinkle paprika on top, cover with foil, and bake for 30 minutes.
  6. Remove foil and bake for an additional 15 minutes until eggs are set.
  7. While baking, prepare Hollandaise sauce by whisking together milk and sauce mix in a saucepan; add butter until thickened.
  8. Slice casserole into 10 pieces and drizzle with warm Hollandaise sauce before serving.
