  • 1/4 cup melted unsalted butter
  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup granulated sugar
  • 1/4 cup vegetable oil
  • 1 large egg
  • 1/2 tsp vanilla extract
  • 1/2 cup Greek yogurt
  • 3/4 cup fresh blueberries (to fold in, tossed with 1 tbsp flour)
  • 3/4 cup fresh blueberries (for topping)
  • 6 oz cream cheese, softened
  • 3 tbsp granulated sugar
  • 1 tsp cornstarch
  • 1 tsp vanilla extract
  • 3/4 cup powdered sugar
  • 1 1/2 to 2 1/2 tsp milk or cream

Instructions

  1. Preheat the oven to 350°F (175°C) and grease your muffin tin.
  2. In a bowl, combine both portions of all-purpose flour, brown sugar, granulated sugar, baking powder, and salt.
  3. In another bowl, mix melted butter, vegetable oil, egg, vanilla extract, and Greek yogurt until smooth.
  4. Combine wet and dry ingredients gently; fold in blueberries tossed with flour.
  5. For the cream cheese filling, blend softened cream cheese with sugar, cornstarch, vanilla extract, powdered sugar, and milk until creamy.
  6. Fill muffin cups halfway with batter; add a dollop of cream cheese filling, then top with remaining batter and extra blueberries.
  7. Bake for 20–22 minutes until golden brown; cool before serving.
