  • 1 cup shredded parmesan cheese
  • 1 cup panko breadcrumbs
  • 2 large eggs
  • 4 cloves minced garlic
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried basil
  • 1 teaspoon dried parsley
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup whole milk (or plant milk if dairy-free)
  • 2 tablespoons unsalted butter
  • 1/4 cup additional parmesan for sprinkling
  • 2 tablespoons fresh parsley for garnish

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine ground chicken, parmesan cheese, panko breadcrumbs, eggs, minced garlic, and all seasonings. Mix until just combined.
  3. Transfer the mixture to a loaf pan and shape it into a loaf form.
  4. Melt butter and mix with any remaining parmesan; brush this mixture over the top of the meatloaf.
  5. Bake in the preheated oven for about 45 minutes until cooked through (internal temperature should reach 165°F/74°C).
  6. Let rest for 10 minutes before slicing and serving.
