Ingredients

  • 1/2 cup olive oil
  • 2 Tbsp fresh lemon juice
  • 2 Tbsp apple cider vinegar
  • 2 Tbsp real maple syrup
  • 1 1/2 tsp dijon mustard
  • Salt (and freshly ground black pepper, to taste)
  • 1 lb. curly kale (about 2 large bunches)
  • 1 large apple, recommend gala, julienned
  • 2 medium carrots, shredded (1 cup)
  • 3/4 cup unsalted slivered almonds, toasted
  • 3/4 cup shredded sharp white cheddar cheese
  • 1/3 cup sliced red onion, sliced very thin

Instructions

  1. Prepare the dressing by whisking together olive oil, fresh lemon juice, apple cider vinegar, maple syrup, and Dijon mustard in a mixing bowl. Season with salt and pepper to taste and refrigerate.
  2. Remove kale leaves from thick ribs, rinse thoroughly under cold water, dry using a salad spinner, and thinly slice into ribbons.
  3. In a large bowl, combine sliced kale with julienned apples, shredded carrots, toasted slivered almonds, shredded cheddar cheese, and thinly sliced red onion.
  4. Whisk the dressing again and pour over the salad mixture. Toss well to coat all ingredients evenly.
  5. Serve immediately for optimal freshness or store in an airtight container for up to 3 days.
