  • 2 cups potatoes (chopped into 1-inch pieces)
  • 2 hard-boiled eggs (cut to bite-sized pieces)
  • ½ English cucumber (thinly sliced)
  • ¼ cup corn
  • ¼ cup carrots (small dice)
  • ¼ cup apple (small dice)
  • â…“ cup mayo
  • 1 ½ teaspoon rice apple vinegar
  • ½ teaspoon salt (for cucumber slices)
  • 1 teaspoon sugar
  • ½ teaspoon salt (or more to taste)
  • ¼ teaspoon black pepper

Instructions

  1. Prepare the cucumber by tossing it with salt and letting it sit for 10 minutes to draw out moisture. Squeeze out excess liquid and set aside.
  2. Boil the chopped potatoes in salted water until fork-tender. Add diced carrots during the last 3 minutes of cooking, then drain and cool.
  3. In a large bowl, combine the cooked potatoes and carrots with cucumber, corn, diced apple, and hard-boiled egg pieces.
  4. Whisk together mayo, rice apple vinegar, sugar, salt, and pepper in a separate bowl until smooth. Pour over the salad mixture and gently toss until everything is well coated.
