  • 1 1/4 cup All-Purpose Flour
  • 3/4 cup Cake Flour
  • 1 tsp Corn Starch
  • 1/2 tsp Baking Powder
  • 1/2 tsp Baking Soda
  • 1/2 tsp Salt
  • 1/2 cup Cold Unsalted Butter, cubed
  • 1/2 cup Light Brown Sugar, packed
  • 1/4 cup White Granulated Sugar
  • 1 Large Egg
  • 1 Egg Yolk
  • 2 cups Milk Chocolate Chips (or Semi-Sweet)

Instructions

  1. Preheat your oven to 400°F.
  2. In a large bowl, whisk together both flours, corn starch, baking powder, baking soda, and salt. Set aside.
  3. In a stand mixer with a paddle attachment, cream the cold butter until slightly softened. Add brown sugar and white sugar; mix until fluffy.
  4. Incorporate one egg and one egg yolk until well combined.
  5. Gradually add the dry ingredients on low speed until just mixed; fold in chocolate chips.
  6. Form six tall cookies (about 5.7 oz each) on a lined baking sheet.
  7. Bake for 10-12 minutes until golden brown on top but still soft in the center.
  8. Allow cooling on the baking sheet for at least 15 minutes before transferring to a cooling rack.
