  • 1 tbsp olive oil
  • 1 tbsp butter
  • 1 onion (or 2 shallots)
  • 1 large carrot
  • 2 stalks celery
  • 1 clove garlic
  • 4 sprigs thyme (or 1/2 tsp dried thyme)
  • litres / 6 cups turkey or chicken stock
  • 250g / 2 cups cooked turkey or chicken
  • 75g / 1/2 cup giant/pearl couscous
  • 2 bay leaves
  • Salt and pepper to taste
  • 1 tbsp parsley (chopped)

Instructions

  1. Heat olive oil and butter in a large pot over low heat. Add chopped onion, carrot, celery, and minced garlic with thyme; sauté for about 5 minutes until softened.
  2. Pour in turkey or chicken stock along with shredded cooked turkey and bay leaves. Bring to a boil and season with salt and pepper.
  3. Once boiling, add giant couscous (or noodles) to the pot. Reduce heat to medium and cook for about 10 minutes until tender.
  4. Remove from heat and garnish with chopped parsley before serving hot.
