  • 1/2 cup chicken cracker crumbs
  • 2 tbsp melted butter
  • 1 tbsp sugar
  • 1/2 cup heavy whipping cream
  • 1/2 cup lemon Greek yogurt (or lemon curd mixed with whipped cream)
  • 1 tbsp powdered sugar
  • 1/2 tsp lemon extract
  • 1/4 cup lemon curd
  • 1 1/2 cups white chocolate or yellow candy melts

Instructions

  1. Prepare the crust by mixing chicken cracker crumbs, melted butter, and sugar. Press into silicone molds and freeze.
  2. Whip heavy cream until soft peaks form, then gently fold in lemon yogurt, powdered sugar, and lemon extract. Chill for 10–15 minutes.
  3. Coat the molds with melted white chocolate or candy melts and let set.
  4. Fill each mold with half of the mousse, add a spoonful of lemon curd, then top with more mousse.
  5. Seal with the crust base and freeze for at least 4 hours until set.
  6. Unmold the puffs and let thaw before serving.
