Ingredients

Scale
  • 12 organic lemons
  • 1 liter non-alcoholic alternative (such as fruit juice or vinegar)
  • 1.5 liters water
  • 3.25 cups granulated sugar

Instructions

  1. Wash and dry the lemons thoroughly.
  2. Peel the lemons carefully with a vegetable peeler, avoiding the bitter pith.
  3. Place the lemon peels in a large glass jar and pour in the non-alcoholic alternative. Seal tightly and store in a cool dark place for 30 days, shaking every few days.
  4. After infusing, heat water until warm and dissolve sugar to create simple syrup; cool completely.
  5. Strain the infused mixture through a sieve lined with coffee filters into a bowl, then mix with the cooled simple syrup.
  6. Using a funnel, pour the mixture into clean bottles and let rest for another 30 days before serving.
