  • 2 lbs lean ground beef
  • 3 cups macaroni noodles
  • 1 cup ketchup
  • 1 cup barbecue sauce
  • 10.5 oz condensed cheddar cheese soup
  • 4 cups shredded mozzarella and cheddar cheese blend
  • 2 eggs
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 30 Ritz Crackers
  • 2 oz Lipton onion soup mix
  • 2 cups milk

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix ketchup and barbecue sauce; set aside.
  3. In a large bowl, combine ground beef, crushed Ritz crackers, onion soup mix, eggs, and half of the sauce mixture; mix thoroughly.
  4. Press the meatloaf mixture into a greased baking dish and top with remaining sauce. Bake for 30 minutes.
  5. Cook macaroni noodles until al dente; drain.
  6. In another bowl, whisk together milk and cheddar cheese soup, then add seasonings and cooked macaroni.
  7. Pour macaroni mixture over the baked meatloaf and top with shredded cheese.
  8. Return to oven for another 17-20 minutes until cheese is melted.
