  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1/2 cup brown sugar
  • 1/3 cup maple syrup
  • 2 large eggs
  • 1 1/4 cups mashed bananas (about 34 bananas)
  • 1 teaspoon vanilla extract
  • 1/4 cup plain yogurt
  • 3/4 cup chopped walnuts or pecans

Instructions

  1. Preheat your oven to 350°F (180°C) and grease a 9×5-inch loaf pan.
  2. In a medium bowl, sift together flour, baking soda, and salt; set aside.
  3. In a mixer, cream together softened butter and brown sugar until fluffy. Add maple syrup and mix well.
  4. Beat in eggs one at a time, then add mashed bananas and vanilla extract until combined.
  5. Gradually mix in half of the dry ingredients, followed by yogurt, then the rest of the dry ingredients until just combined. Fold in nuts.
  6. Pour batter into the prepared loaf pan, top with reserved nuts, and bake for 50-60 minutes or until a toothpick comes out clean.
  7. Drizzle warm maple syrup over the bread before allowing it to cool completely.
