  • 275g plain flour (2 cups)
  • 125g unsalted butter (cold, cubed) (1/2 cup + 1 tbsp)
  • 3 tbsp sugar
  • 1 large egg
  • 12 tbsp cold water
  • 1214 tsp seedless raspberry jam
  • 60g caster sugar (1/3 cup)
  • 60g unsalted butter (softened) (1/4 cup)
  • 1 large egg (beaten)
  • ½ tsp almond extract
  • 60g ground almonds (2/3 cup)
  • 30g plain flour (3 ½ tbsp)
  • ½ tsp baking powder
  • ¼ tsp salt
  • Flaked almonds

Instructions

  1. Prepare the pastry dough by mixing plain flour and cold butter until crumbly. Add sugar, egg, and cold water; mix until soft dough forms. Chill for 30 minutes.
  2. For the filling, cream softened butter and caster sugar until fluffy. Beat in an egg and almond extract, then gently fold in ground almonds, additional flour, baking powder, and salt.
  3. Preheat oven to 180°C (350°F). Roll out chilled pastry and cut circles to line cupcake tin compartments. Prick bases and fill with raspberry jam followed by almond mixture. Top with flaked almonds.
  4. Bake for 18-20 minutes until golden brown. Cool on a wire rack before serving.
