  • 1 small onion, chopped
  • 3 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 small zucchini, diced
  • ½ tsp salt
  • ½ tsp black pepper
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • ½ cup cherry tomatoes, halved
  • ¼ cup kalamata olives, sliced
  • Fresh parsley and lemon juice for garnish

Instructions

  1. Heat olive oil in a large skillet over medium-high heat until shimmering.
  2. Add ground beef, season with salt and black pepper, and cook for about 5–7 minutes until browned.
  3. Stir in chopped onion and minced garlic; sauté until the onion is translucent (about 3–4 minutes).
  4. Add diced bell pepper and zucchini; cook for another 4–5 minutes until tender.
  5. Sprinkle in cumin, smoked paprika, mix well to combine all flavors.
  6. Fold in cherry tomatoes and kalamata olives; cook for another 1–2 minutes until heated through.
  7. Remove from heat and garnish with fresh parsley and lemon juice before serving hot.
