  • 2 large tomatoes, chopped
  • 3/4 cup beef stock
  • 1 tablespoon paprika
  • 1 tablespoon Mexican oregano
  • 1 teaspoon cumin
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pan over medium heat. Add diced potatoes, onion, and peppers; cook for about 5 minutes until softened.
  2. Stir in garlic and ground beef; brown for approximately 5 minutes.
  3. Add tomatoes, beef stock, and seasonings; reduce heat to simmer.
  4. Allow to simmer for about 20 minutes until flavors meld and potatoes are tender.
