  • 1 small zucchini
  • 1 cup fresh green beans
  • 1 (28 oz) can crushed tomatoes
  • 4 cups chicken or veggie broth
  • 1 (14 oz) can red kidney beans
  • 1 (14 oz) can white kidney beans
  • 3/4 cup uncooked elbow macaroni
  • Italian seasoning

Instructions

  1. In a large soup pot over medium heat, melt olive oil and butter.
  2. Add chopped onion, celery, carrots, and minced garlic; sauté for 7-10 minutes until softened.
  3. Stir in crushed tomatoes, broth, zucchini, green beans, red kidney beans, white kidney beans, and Italian seasoning; bring to a boil.
  4. Reduce heat to a simmer; cover partially and cook for 10 minutes.
  5. Add uncooked elbow macaroni; continue simmering uncovered for another 15-20 minutes until pasta is tender.
  6. Season with salt and pepper to taste; stir in fresh basil if desired before serving.
