  • 100 g softened unsalted butter
  • 100 g caster sugar
  • 65 g light brown soft sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 215 g plain flour
  • 1/2 tsp baking powder
  • 1/4 tsp bicarbonate of soda
  • 1/4 tsp salt
  • 100 g milk chocolate chips
  • 125 ml double cream
  • 125 g dark chocolate

Instructions

  1. Preheat the oven to 180°C Fan/Gas Mark 6 and grease a cupcake tin.
  2. In a mixing bowl, cream together butter, caster sugar, and light brown sugar until fluffy.
  3. Add the egg and vanilla extract; mix until combined.
  4. Mix in flour, baking powder, bicarbonate of soda, and salt until just incorporated.
  5. Fold in milk chocolate chips and crushed Mini Eggs.
  6. Shape dough into cups in the cupcake tin using a small cylindrical object.
  7. Bake for about 12 minutes until golden brown; gently press down centers after removing from the oven.
  8. For ganache, microwave dark chocolate with butter and double cream until smooth; let cool slightly before filling the cups.
  9. Top each cup with three Mini Eggs.
