  • 4 cups mixed berries and stone fruit
  • ¼ cup granulated sugar
  • 1 tsp vanilla extract
  • 1 tbsp cornstarch
  • Zest and juice of half a lemon
  • 1 tbsp chopped basil
  • ½ cup all-purpose flour
  • 1 cup old-fashioned oats
  • ¼ cup brown sugar
  • 6 tbsp cold, unsalted butter

Instructions

  1. Preheat your oven to 375°F (190°C) and prepare three small cast iron pans or ramekins by spraying them with non-stick spray.
  2. In a medium bowl, combine flour, oats, brown sugar, salt, and butter. Use your fingers or a pastry blender to mix until it resembles coarse crumbs. Refrigerate.
  3. In another bowl, mix the fruit with granulated sugar, vanilla extract, cornstarch, lemon zest, lemon juice, and basil until combined.
  4. Divide the fruit mixture among the prepared dishes and sprinkle the crumble topping evenly over each.
  5. Bake for 30–35 minutes until bubbly and golden brown. Let cool for at least 10 minutes before serving.
