  • ½ cup honey
  • â…“ cup all-natural creamy peanut butter (plus extra for the top)
  • 6 oz. dark chocolate (chopped)
  • 2 teaspoons coconut oil (for the chocolate layer)
  • Optional toppings: mini chocolate chips, chopped nuts

Instructions

  1. Prepare a muffin pan by lining it with paper liners or using a silicone pan.
  2. In a bowl, mix together quick-cooking oats, honey, peanut butter, and chopped peanuts until well combined. If too dry, add water as needed.
  3. Scoop about 2 tablespoons of the oat mixture into each muffin cup and press down firmly.
  4. In a microwave-safe bowl, melt dark chocolate and coconut oil in short increments until smooth.
  5. Spoon melted chocolate over the oat layers and swirl gently to combine. Freeze for about 5 minutes.
  6. Mix additional peanut butter with coconut oil in another bowl; microwave until smooth.
  7. Add this mixture on top of the chocolate layer and sprinkle with mini chocolate chips.
  8. Freeze for at least 30 minutes until set before storing.
