  • 48 oz chicken broth
  • 2 cans (14.5 oz each) cannellini beans
  • 4 oz turkey slices, diced
  • 1 medium yellow onion, diced
  • 3 garlic cloves, minced
  • Extra virgin olive oil
  • 1 lb ditalini pasta

Instructions

  1. Boil ditalini pasta in salted water until al dente (6-7 minutes). Drain and set aside.
  2. In a large pot, heat olive oil over medium heat. Sauté onions until translucent.
  3. Add minced garlic; cook for 1 minute.
  4. Stir in diced turkey and cook until lightly browned (about 5 minutes).
  5. Incorporate cannellini beans with juice; bring to low boil.
  6. Process tomatoes in a food processor until broken up; add to the pot with chicken broth.
