  • 1 cup milk
  • 1 medium yellow onion (diced)
  • 2 cloves garlic (minced)
  • 1 tablespoon butter
  • 2 pounds ground beef
  • 1 large egg
  • 1 tablespoon Worcestershire sauce
  • 1/2 teaspoon dried thyme
  • 1 teaspoon kosher salt
  • 1/2 cup ketchup
  • 1 tablespoon brown sugar
  • 1 tablespoon spicy brown mustard

Instructions

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a small bowl, mix panko bread crumbs with milk until well combined.
  3. In a sauté pan, melt butter over medium-high heat. Add diced onion and cook until fragrant. Add minced garlic and cook an additional few minutes before removing from heat.
  4. In a large mixing bowl, combine ground beef, soaked bread crumbs, egg, Worcestershire sauce, thyme, salt, and the cooled onion-garlic mixture. Mix gently to combine and shape into a loaf on the prepared baking sheet.
  5. Bake uncovered for about 40 minutes. Meanwhile, prepare the topping by mixing ketchup, brown sugar, and mustard in a bowl.
  6. After initial baking time, spread the topping over the meatloaf and continue baking for an additional 30-35 minutes until the internal temperature reaches 160°F (70°C).
