  • 2 lb chicken (thighs and drumsticks)
  • 22 oz potatoes
  • 4 cloves garlic
  • 1/4 cup olive oil
  • 1/2 cup lemon juice
  • 1 Tbsp lemon zest
  • 1 1/2 Tbsp tomato paste
  • 1 tsp salt
  • 1/2 Tbsp dried oregano
  • 1/2 tsp black pepper
  • 1 tsp paprika
  • fresh parsley (for garnish)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a mixing bowl, combine olive oil, minced garlic, tomato paste, lemon juice, lemon zest, salt, oregano, black pepper, and paprika to create the sauce.
  3. Chop potatoes into even-sized pieces if necessary and pat both chicken and potatoes dry.
  4. Arrange chicken and potatoes on a sheet pan. Pour the sauce over them and rub it in well.
  5. Bake for about 40 minutes or until chicken is cooked through (165°F) and potatoes are tender. Let it rest for 5 minutes before serving with garnish.
