  • 1 cup pitted dates, chopped
  • 1 cup boiling water
  • 1 tsp baking soda
  • 1/2 cup unsalted butter, softened
  • 3/4 cup light brown sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • Zest of 2 oranges
  • 1/2 cup fresh orange juice
  • 1 1/2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp ground cardamom
  • 1/4 tsp salt
  • 1/4 cup honey
  • 1 tbsp fresh orange juice

Instructions

  1. Preheat oven to 350°F (175°C) and grease an 8-inch cake tin.
  2. In a bowl, combine flour, baking powder, ground cardamom, and salt.
  3. In another bowl, cream together butter and light brown sugar until fluffy. Add eggs one at a time, followed by vanilla extract, orange zest, and orange juice.
  4. Fold in chopped dates into the wet mixture.
  5. Gradually add dry ingredients to the wet mixture until just combined.
  6. Pour batter into prepared tin and bake for 40–45 minutes or until a toothpick inserted comes out clean.
  7. For the honey drizzle, warm honey and orange juice in a saucepan until combined.
  8. Once baked, drizzle honey mixture over warm cake and allow to cool slightly before serving.
