  • 1 cup pitted dates, chopped
  • 1 cup boiling water
  • 1/2 cup unsalted butter, softened
  • 3/4 cup light brown sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • Zest of 2 oranges
  • 1/2 cup fresh orange juice
  • 1/4 cup honey

Instructions

  1. Preheat oven to 350°F (175°C) and grease an 8-inch cake tin.
  2. In a bowl, whisk together flour, baking powder, baking soda, ground cardamom, and salt.
  3. In another bowl, cream the softened butter and light brown sugar until fluffy.
  4. Add eggs, vanilla extract, orange zest, and orange juice to the creamed mixture; mix until combined.
  5. Fold in chopped dates gently.
  6. Gradually add dry ingredients to the wet mixture; stir until just combined.
  7. Pour batter into the prepared cake tin and bake for 40–45 minutes or until a toothpick comes out clean.
  8. For the honey drizzle, warm honey and fresh orange juice in a saucepan over low heat.
  9. Drizzle warm mixture over the cake before serving.
