  • Tortilla chips
  • 1 lb lean ground beef
  • 2 tablespoons taco seasoning
  • 1 can black beans, drained
  • 1 orange pepper, diced
  • 1 small red onion, diced
  • 1 cup cherry tomatoes, sliced
  • From 2 ears of corn (kernels)
  • 1 can black olives, sliced
  • 1 can green olives, sliced
  • Scallions, chopped
  • Jalapeños, thinly sliced
  • 2 cups Monterey Jack cheese
  • 2 cups cheddar cheese
  • 1 cup sour cream
  • Juice from 2 limes
  • 1 teaspoon kosher salt
  • Avocado, chopped
  • 2 tablespoons chopped cilantro

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, mix sour cream, lime juice, and salt. Transfer to a squeeze bottle and refrigerate.
  3. Cook ground beef in a skillet until browned. Stir in taco seasoning.
  4. Layer tortilla chips in a springform pan; add beef, veggies, and cheese in multiple layers.
  5. Bake for 30 minutes until cheese is melted. Drizzle with sauce and top with avocado and cilantro before serving.
