  • 1 white fish fillet (tilapia, cod, or sole)
  • 1 cup baby potatoes or Yukon gold, cubed
  • 1 ripe avocado
  • 1 tsp olive oil
  • Salt, to taste
  • Pepper, to taste
  • 1 tsp garlic powder, to taste
  • 1 tsp smoked paprika, to taste
  • 1 tbsp chopped tomato
  • 1 tbsp chopped red onion or green onion
  • Lime juice, to taste

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Toss cubed potatoes with olive oil, smoked paprika, salt, and pepper. Spread on a baking sheet and roast for 25-30 minutes, flipping halfway through.
  3. Season the fish fillet with salt, pepper, garlic powder, and paprika. Heat olive oil in a non-stick skillet over medium-high heat and sear the fish for 3-4 minutes on each side until cooked through.
  4. In a bowl, mash the avocado and mix in chopped tomato, onion, lime juice, and salt.
  5. Serve the fish with roasted potatoes and a generous scoop of guacamole.
