  • 1 egg
  • ½ cup breadcrumbs (preferably panko)
  • ½ cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 Tbsp fresh parsley, chopped
  • 1 tsp onion powder
  • ½ tsp paprika
  • Salt and pepper, to taste
  • 2 Tbsp butter (for sauce)
  • 2 Tbsp flour (for sauce)
  • 1½ cups milk
  • ¾ cup grated Parmesan cheese (for sauce)
  • ½ cup shredded mozzarella (for sauce)
  • Mashed potatoes or cauliflower purée (for serving)
  • Fresh thyme or parsley (for garnish)

Instructions

  1. Preheat your oven to 200°C (400°F).
  2. In a mixing bowl, combine ground chicken, egg, breadcrumbs, Parmesan cheese, garlic, parsley, onion powder, paprika, salt, and pepper. Mix gently until combined.
  3. Shape the mixture into golf ball-sized balls and place them on a parchment-lined baking tray. Bake for 20–25 minutes until golden brown.
  4. For the sauce, melt butter in a saucepan over medium heat. Whisk in flour for about a minute until it forms a roux. Gradually add milk while whisking until smooth. Stir in Parmesan and mozzarella cheeses until creamy.
  5. Transfer baked chicken bombs to a casserole dish and pour the creamy sauce over them. Broil for an additional 3–5 minutes until bubbling.
  6. Serve over mashed potatoes or cauliflower purée, garnished with fresh herbs.
