  • 2 celery stalks (diced)

  • 1 can (15 oz) cannellini beans, drained
  • 1 can (15 oz) kidney beans, drained
  • 1 can (28 oz) crushed tomatoes
  • 4 cups low-sodium chicken or vegetable broth
  • 1 cup water
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1/2 tsp red pepper flakes (optional)
  • 1/2 tsp kosher salt
  • 1/4 tsp black pepper
  • 1 cup ditalini pasta
  • Optional: Fresh parsley
  • Suggested Pairings: Red apple vinegar

Instructions

  1. Heat olive oil in a large pot over medium heat. Add diced onion, carrots, and celery; sauté for 5–7 minutes until softened. Stir in minced garlic and cook for an additional minute.
  2. Add drained cannellini beans, drained kidney beans, crushed tomatoes, broth, water, oregano, basil, red pepper flakes (if using), salt, and black pepper to the pot. Bring to a boil then reduce heat to simmer for about 10 minutes.
  3. Stir in ditalini pasta; continue to simmer for another 8–10 minutes until pasta is al dente. Adjust seasoning as needed.
